Hi, I forgot to ask this in class earlier today: can we have our interpretation of the matrix size (N) so long as we clearly explain it in our README file?

I'm assuming the N represents the number of grid points and not size (thus grid size = 2/(n-1) ), where the outer-most grid points are on the boundary (and thus always equal to the BC).

Is this an acceptable approach/interpretation?

Yes, N is the number of grid points. This problem is actually scale invariant, i.e, it does not matter what the physical size is.
